Instant Pot Beef & Broccoli

Rich and savory beef and broccoli in under 30 minutes - thanks to pressure cooking!

I’m so excited to be sharing instant pot recipes finally. I got one for Christmas a few years ago and it has made my life so much easier - especially now that I work full-time. One of my biggest struggles is getting off of work at 5 and commuting home - still in my head thinking I can get dinner on the table at 6. I’ve definitely become more flexible that we may be eating at 7 and that’s totally okay. The instant pot makes dinners SO quick and is especially a lifesaver when I have forgotten to thaw a protein. This beef and broccoli recipe has a teeny bit of sauteing and then you pressure cook for 10 minutes. And you get this rich and lovely dinner that tastes like you’ve slow cooked it for hours!

What You Need:

For the Sauce:

  • 1/2 cup low sodium beef broth

  • 2 Tbsp. cornstarch

  • 3 Tbsp. Shaoxing wine

  • 2 Tbsp. oyster sauce

  • 1 tsp. fresh minced ginger

  • 1 Tbsp. sriracha

  • 2 Tbsp. sesame oil

  • 1/4 cup low sodium soy sauce

  • 3 Tbsp. brown sugar

  • 3 cloves minced garlic

  • 1/4 tsp. red pepper flakes

For the Beef & Broccoli:

  • 3 Tbsp. vegetable oil

  • 1 head broccoli, cut into florets

  • 1 lb. flank steak, sliced into thin strips

  • 1 Tbsp. sesame seeds

  • Cooked rice or noodles for serving

Directions:

  1. In a mason jar, add all sauce ingredients. Close lid and shake until combined. Or whisk together all ingredients in a bowl.

  2. In a medium bowl, add steak and pour 1/4 cup sauce over the top. Toss to coat. Set aside.

  3. Turn on Instant Pot to saute setting and add 1 Tbsp. vegetable oil.

  4. Once oil is hot, add broccoli and saute for 3 to 5 minutes until vibrant green. Remove and set aside.

  5. Add remaining 2 Tbsp. vegetable oil and once hot, add beef to it. Saute for 3 to 5 minutes until it starts to brown.

  6. Add remaining sauce carefully (hot oil may splatter).

  7. Cover with lid and pressure cook on HIGH for 10 minutes.

  8. Quick release the pressure and stir in broccoli.

  9. Serve over rice or noodles, garnished with sesame seeds.
