Poblano & Corn Queso

A hearty and milder queso that is great for a party with poblano and corn!

As a chronic recipe saver, I forget that I basically only make main dishes and so I have so so many non-main dish recipes saved. During any holiday is when I break out any recipe I can which includes appetizers like this queso! I believe this was a NYE dish and we all really loved it. You can’t go wrong serving up queso to a crowd. This one is a little heartier with corn, poblano, and tomato in it.

What You Need:

  • 1 Tbsp. unsalted butter

  • 1/3 cup minced onion

  • 2 cloves minced garlic

  • 1 poblano chile pepper, charred, peeled, seeded and diced

  • 1 Tbsp. all purpose flour

  • 1 cup milk

  • 1/4 cup corn (cooked)

  • 1 roma tomato, diced

  • 1 1/4 cup shredded pepperjack cheese

  • Salt and pepper to taste

Directions:

  1. In a large saucepan, melt butter over medium heat.

  2. Add onion and cook for 2 minutes.

  3. Then add garlic and poblano and cook for 2 minutes.

  4. Stir in flour and cook for an additional minute.

  5. Slowly whisk in milk. Bring mixture to a simmer.

  6. Stir in corn and diced tomatoes. Simmer for an additional 2 to 3 minutes.

  7. Remove from heat and stir in cheese until melted and smooth.

  8. Season with salt and pepper to taste.
